Filip Kucharczyk is a Polish barista and a founder of Cafe Targowa in Wrocław. In this winning recipe, the combination of a large coffee dose, a coarse grind, and a low temperature makes for a gentle extraction. If you get it right, you should end up with a sweet, full-bodied coffee that has a higher (yet still balanced) acidity.

Steps
Place a paper filter in the cap and rinse with hot water. | |||

Pour 150 g of hot water over the grounds. |
